The Reflectoquant Malic Acid Test can be used for the determination of the decrease in malic acid concentration during the wine-making process. Malic acid (malate) is oxidized to oxalacetate by NAD under the catalytic effect of malate dehydrogenase. In the presence of diaphorase the NADH formed in the process reduces a tetrazolium salt to a red formazan that is determined reflectometrically on the RQflex.

pH‑Fix strips with chemically bound indicators are the bench mark for pH testing with test strips. The fixation prevents bleeding and therefore contamination of the sample.
